Ingredients

  • 2 to 4 garlic cloves, minced or mashed into a paste
  • 1½ teaspoons fresh lemon juice, plus more to taste
  • ¼ teaspoon fine sea salt, plus more to taste
  • 1 large egg
  • 1 large egg yolk
  • ½ cup extra-virgin olive oil

Directions

  1. In a blender or food processor, combine garlic, lemon juice, and salt. Let the mixture rest for 2–3 minutes to mellow and infuse.
  2. Add the egg and egg yolk, then blend until smooth.
  3. With the motor running, slowly drizzle in the olive oil followed by the neutral oil in a thin, steady stream until the mixture is thick and creamy.
  4. Taste and adjust with more salt or lemon juice as needed.
