Cilantro Lime Crema

This is almost a no-recipe recipe. You can play with the proportions to achieve the balance of creaminess to acidity that you prefer, so consider the quantities as a recommend starting point.

Ingredients

  • ½ cup sour cream
  • 1 cup heavy cream
  • 1 bunch cilantro, leaves only
  • Juice from ½ a lime
  • ½ teaspoon salt

Directions

  1. Combine all ingredients in a blender or food processor and blend until smooth. Taste and adjust as desired - you can add more lime juice if you prefer more acidity, or extra sour cream if you want a slightly thicker crema. Store in the fridge for up to 2 weeks.
