Ginger Peach Iced Tea and Mint Lemon Simple Syrup

Ingredients
- ⅓ cup Wright Tea Co Ginger Peach Tea (approximately ½ bag)
- 1 gallon water
- 1 cup mint leaves
- Peel of 2 lemons
- 1 cup sugar
- 1 cup water
Directions
- In a small saucepan, combine the mint, lemon peel, sugar and water. Bring to a boil and reduce heat to a simmer, stirring to dissolve the sugar. Turn off the heat and let steep for one hour. Strain the mint and lemon peel and store in a lidded bottle in the fridge for
- Cut a square of cheese cloth. Place the tea in the center of the cheese cloth and then wrap the cheesecloth around the tea, forming a pouch. Tie off with kitchen twine. Add the tea pouch to the gallon of water and place in the fridge for 12-24 hours. Alternatively, the loose tea leaves can be added directly to the water and strained out before serving.
- When ready to serve, sweeten the tea to taste with the simple syrup. Start with ½ cup and add more according to your own taste. Serve over ice.
